Egg Coffee in Hanoi's Old Quarter: A Hidden Café Worth

The entrance is easy to miss. A shopfront selling plastic basins and phone cases, and behind it, a staircase so narrow I have to turn my duffel sideways. Up one flight, then another, and the city changes temperature. By the third floor the street noise has gone soft, filtered, like someone turned a dial.

The café is four tables and a window facing Nguyen Huu Huan Street. The woman who runs it doesn't ask what I want. Egg coffee, obviously, this is why anyone climbs those stairs. It comes the way it always comes here: the cup nested in a small bowl of hot water, keeping the whole thing warm while the yolk on top slowly loses its structure into the coffee below. Thick. Sweet enough to be dessert, bitter enough to still be coffee. I stir once and let it sit.

From the window I can see the Old Quarter doing its usual arithmetic: motorbikes, baskets of star fruit, a man reorganizing a tower of plastic stools that will fall over again in ten minutes. It is 13:35 and the heat outside has that thick, early-afternoon weight to it, the kind that makes everyone move a little slower, or maybe that's just me, three floors up with my camera on the table, untouched. Some places don't need documenting right away. Some places just need to be sat in first.

I think about how coffee got here, into an egg, into a hidden room above a shop corridor, decades ago when milk was hard to come by and someone improvised with what they had. Saudade for a solution nobody asked you to need. That's most of Hanoi's food, if you look closely: necessity dressed up as invention, and invention eventually becoming tradition, and tradition eventually becoming the reason a stranger climbs three flights of stairs on a Tuesday.

I finish the cup slower than I mean to. The spoon scrapes the bottom for the last foam, the part that tastes like burnt sugar and eggnog and something I don't have a word for in any of my three languages. Below, the street keeps going without me. It doesn't need an audience. Neither, today, do I.

If you go: climb the unmarked stairs on Nguyen Huu Huan Street around 1pm, order egg coffee, sit by the window facing the street.
