Dinner in Kazbegi: Khinkali by the Wood Stove in

The khinkali come out in batches, never all at once, as if the kitchen wants you to notice each one. The grandmother who runs this place doesn't speak much English and doesn't need to. She points at the dumplings, then at my hands, meaning: use your fingers, not the fork. I obey. The broth runs down my wrist before I figure out the bite-twist-drink rhythm everyone else at the table already knows.

Outside, Kazbegi has disappeared. Not gone, just unlit. Somewhere past the glass, Mount Kazbeg is doing what it does, being enormous, being indifferent to whether I can see it or not. The window holds only the reflection of the room now: the stove, the low bulb, someone's coat on a chair. I keep glancing at it anyway, like the mountain might announce itself.

The wood stove ticks in a way that feels almost domestic, almost like a clock that gave up on precision. It smells like resin and something faintly sweet, maybe the bread, maybe the wine nobody asked me if I wanted but poured anyway. A dog sleeps under the table, unbothered by boots. Someone's grandfather tells a story in Georgian that I don't understand a word of, but the shape of it, the pauses, the way the whole table laughs before the punchline, tells me enough.

I think about how far this room is from anywhere I usually sit still. Milan feels theoretical. São Paulo feels theoretical. Here there is only this table, this stove, this mountain I can't see but know is there, the way you know a person is behind you in a dark room. My camera sits by my plate, untouched for now. Some rooms don't need documenting immediately. They need to be eaten in first.

Later I'll step outside for air and the cold will hit like a decision. The sky will be doing something absurd with stars. But right now, at 19:09, in this particular kitchen in Stepantsminda, the only thing that matters is the next khinkali, still too hot, and the stove, still ticking, and the mountain, patient, black, waiting for morning to prove it was there all along.
