Bun Cha Breakfast in Hanoi's Old Quarter: Where to Sit

bun cha hanoi old quarter: Low plastic table on a Hanoi sidewalk with bun cha, grilled pork in broth, and a dripping Vietname
Sofia Costa · 35mm№253 → Vietnam

Nine in the morning and Hang Manh Street is already working. Scooters idle at the curb, someone hoses down the pavement two doors over, a woman stacks plastic stools like they weigh nothing. I take the low table closest to the grill because I want to watch, not just eat.

The pork arrives still singing from the charcoal, dropped into broth that smells like fish sauce and caramel and something charred underneath. Herbs on the side, a tangle of noodles, nothing plated for a photograph, just food that knows what it is. I eat with my hands more than the chopsticks allow. The coffee drips slow beside it, condensed milk pooling at the bottom of the glass, patient the way nothing else here is.

An old man at the next table eats the same thing I do, reading a folded newspaper, not looking up once. I think about how breakfast in Hanoi is not a ritual, it is just Tuesday. Nobody here is performing a morning. That is the part I came for, the part a camera can only half catch: the plastic stool too small for my knees, the steam fogging up nothing because the air is already thick with it, the specific sound of broth being slurped by six people at once and no one minding.

My film camera sits on the table, unused for most of the meal. Some mornings the shot is not worth interrupting the eating for. I take two frames before the broth gets cold, one of the grill, one of the old man's newspaper, and that is enough. The rest I keep the old way, the way my mother kept recipes, by memory and by smell. Hang Manh Street at nine in the morning: pork fat and coffee and someone's radio two stalls down playing something I don't recognize. Saudade, already, for a place I haven't left yet.

Low plastic table on a Hanoi sidewalk with bun cha, grilled pork in broth, and a dripping Vietnamese coffee in morning light.

If you go: arrive before 9am, sit at the low tables outside, order bun cha with an extra side of nem, then the egg coffee after.
