The shop seats maybe eight people, if they don't mind knees touching. I don't mind. The man behind the counter has been pulling künefe from the same flat pan for what looks like decades, and he doesn't look up when I order. He already knows what a tourist at this hour wants.

It arrives too hot to eat properly. The cheese stretches when I pull the fork away, thin gold strings that snap and fall back onto the plate. Pistachio, crushed fine, green against the amber. The coffee comes in a cup smaller than my palm, grounds settled thick at the bottom, no sugar because I forgot to ask and he didn't offer. Istanbul does not go out of its way for you. You adjust, or you don't.

Outside the window, Sultanahmet is doing its evening thing: calls to prayer overlapping with a street vendor selling roasted chestnuts, the smell of smoke and sugar mixing in a way that shouldn't work but does. Someone's dog is barking at the tram. A kid runs past holding a simit bigger than his own head. I sit here with my camera on the table, unused for the last hour, because some moments don't need to be kept, only eaten.

I think about my avó, who used to say dessert should never be rushed, que doce se come devagar. She was talking about brigadeiro at a kitchen table in São Paulo, not künefe in a shop the size of a closet in Istanbul, but the rule holds. Sweet things ask for time. So does this coffee, bitter enough to need a minute before the next sip.

By the time I finish, it's fully dark outside, the kind of dark that comes fast in October. The pastry shop owner is already stacking chairs for the next round of customers. I leave a few lira on the table and step back into the street, stomach full, hands smelling faintly of pistachio. Nobody in this city owes me anything, and tonight that feels like exactly enough.
